Granitas are a good treat and can be made in numerous flavors including coffee, strawberry, and my recipe for lemon.
Mint Chocolate Chip Granita
2 cups water
8 mint leaves, crushed
1/2 cup unsweetened cocoa powder
½ cup sugar
1/2 cup half & half
1 tsp mint extract
handful chocolate chips or shaved chocolate to taste
Heat water to boiling with mint leaves. Once boiling, reduce heat, add cocoa and sugar, stirring to dissolve. Let cool to room temperature and add half & half and mint extract. Stir well, add chips or shavings as desired, and then freeze in shallow container (such as metal lasagna pan). As mixture freezes, drag a fork through it every twenty minutes or so at the beginning and a bit more frequently as it gets more frozen. Serve when still slightly slushy. The kids love when this is served in a wine glass with a sprig of mint on top.
