Beet Salad with Lime Vinaigrette (Raw) & School’s Out for Summer

Nothing says Summer Fun for kids like a raw beet salad, right?

Wrong.  But this does not mean I won’t make it again.  It was a great for items in my CSA delivery and because it’s barely heated through, the beet retains bite

 

Beet Salad with Lime Vinaigrette (raw) 

2 beets, washed, peeled and thinly sliced (about 1/8 inch give or take)

3 tbsp lime juice

1-2 tbsp honey

pinch sea salt (try Maldon‘s)

splash olive oil

Place the beets in a shallow dish.  Drizzle lime juice and toss.  Let stand for a few minutes. Mix honey, salt, and oil with fork or whisk.  Pour onto beets and toss so that juice and honey mix coat evenly.  Serve with beet green and crumbled chevre or bucheron and let the good time roll.
